Blueberry Cottage Cheese Pancakes (gluten free, sugar free)



Who else loves breakfast for dinner?? Or, just breakfast in general? Especially when it's high in protein like these Blueberry Cottage Cheese Pancakes, which are made with cottage cheese and are also gluten free and sugar free! That's a dinner (and/or breakfast) that you can feel good about. Sadly this pretty much finishes up the last of my garden blueberries, but they were so good while they lasted! These would be good with any seasonal fruit though - and of course, all of your favorite pancake toppings!


Ingredients:

1/2 cup rolled oats

3 eggs

1/4 cup gluten free flour

3/4 cup Muuna 2% cottage cheese

1/2 tsp baking powder

2 tbsp monkfruit sweetener

1 tsp vanilla extract


Directions:


1. Add all ingredients to high-speed blender and blend until smooth


2. Pour approximately 4-inch circles onto heated and oiled pan or griddle (cook over medium-low heat to avoid burning). Flip when underside starts to turn golden brown (about 2 minutes, depending on how light or dark you like your pancakes!).


3. Cook until opposite side is fully cooked, about another 2 minutes. Remove from heat; best if served immediately.


4. Serve with desired toppings and/or pancake syrup.
