Char-grilled Oysters with Garlic Herb Compound Butter
These oysters are one of our favorite meals to make, whether we are entertaining a crowd or it's just the two of us. The recipe can easily be scaled up or down, because the only real preparation is the compound butter. This is a great appetizer/first course for entertaining, but we also love to eat this as our dinner when it's just the two of us.
1 stick salted butter, softened
4 cloves garlic, minced
1/2 cup parsley, finely chopped
Zest and juice of 2 large lemons
1/2 cup grated Parmesan cheese
24 oysters, shucked, on the half shell
1. Add the first 4 ingredients to a food processor and mix on high speed until well combined. Remove from food processor and refrigerate until firm.
2. When ready to grill the oysters, divide compound butter evenly and place on top of each oyster. Sprinkle each oyster with about 1 tsp grated Parmesan.
3. Heat grill to 400 degrees F or higher, and grill oysters directly on the grill grate for approximately 8 -10 minutes, until the edges of the oyster curl and the Parmesan cheese starts to brown.
4. Serve with grilled bread slices and lemon wedges.
If you love garlic butter, like we do, I will warn you now -- you may want to double the compound butter (or at least make 1.5x the recipe!)
